NON FORCING

PAIN DI ZUCCHERO (SUGAR LOAF)
Forms large, oval hearts which have a mild flavour. Frost is said to improve the flavour.

PALLA ROSSA (RADICCHIO)
Produces firm heads with a deep red colour, good cold tolerance. Ribs are white and crisp.

ROSSO TREVISO
Long, pointed leaves, which start off green and turn to red in colder months. Roots can be forced, like Witloof to make the shoots paler and more tender. Very ancient variety recorded in the 16th century.

FORCING

WITLOOF
